What's for dinner? Make a Meal with us!

On the 2nd November 2020, we launched our annual Make a Meal Campaign! Each week we have been sharing a different recipe for inspiration, and this week, we've got a Malawian twist on a classic go-to dinner. Have you signed up to take part? Thanks to our friend Enock Bamusi who lives in Glasgow, Scotland, we've got dinner tonight covered!

Enock's Chicken Stew

*1{1/2}* Ibs chicken pieces 

*1Tbsp* oil 
*3* medium carrots sliced 
*1* medium sweet onion 
*6* garlic cloves chopped
*5* cups chicken stock 
*2* tbsp flour 
*1* dried bay leaf 
*12* potatoes 
1/4 chopped fresh parsley salt and black pepper

*METHODS*
*(1)* Season the chicken with salt and pepper 

*(2)* Heat oil add chicken and cook stirring occasionally until brown on all sides about 6mins 

*(3)* add carrots and onions keep on stirring until onion begin soften 4 to 5mins,add garlic and 1/2 cup chicken stock or water 

*(4)* whisk flour 1/2 cup broth add bay leaf season with salt and pepper to taste let it simmer for 25mins 

*(5)* add potatoes and parsley ready to serve.

Simply bake, cook, create a meal, collect a small donation (the cost of a takeaway or meal in a restaurant), and donate the proceeds. We're aiming to raise £3,000 this year to support the cost of food and medical care for our Infant Homes in Blantyre and Mangochi.
